Refined and healthy shojin cuisine
A popular restaurant in Kyoto, Ajiro welcomes its guests with refined shojin (vegetarian monk food) cuisine and yuba, a delicacy of Kyoto composed of fresh layers of soymilk skin. Based on the traditional shojin cuisine, some of the ingredients include broth made from kelp, dried shiitake mushrooms, and dried gourd shavings, Kyoto vegetables, fresh yuba and nama-fu (wheat starch cake). This special cuisine has attracted the guests not only with the delicious flavours of the seasonal ingredients, but also for being a nutritious meal with high protein and low calories.
