The delicacy of Kyoto you should not miss especially during the summer is the ayu (sweetfish), a specialty cuisine of Tsutaya. From sashimi prepared with the fish caught in the clear waters of Hozugawa river to charcoal-grilled dish seasoned only with salt, this renowned restaurant serves various sweetfish dishes of excellent quality. The guests can enjoy such cuisine passionately prepared by the owner, Mr. Kiyokuni Inoue , when the sweetfish is in season from June to September. Recommended delicacy to enjoy in autumn is matsutake mushrooms, freshly gathered in the morning from the mountains nearby.
