Isshi Souden Nakamura
Gastronomic tradition since the Edo era with three Michelin stars
Since its foundation in the Edo era, Nakamura Kyoto cuisine has continued to this day the style of serving Kyoto cuisine in zashiki-style (a room with tatami floor) seating. Based on the philosophy of "isshi soden", a tradition of passing on the selects of recipe to only one son and heir, the ultimate signature dish being passed on is the rice dumpling soup seasoned with white miso paste. No seasoning or broth is being used except for white miso and water, and is served with fragrantly grilled rice dumplings with a hint of Japanese mustard. Enjoy the exquisite cuisine with true flavors of the ingredients in a beautiful zashiki-seating, with comfortable hori-gotatsu (floor table with legroom).
