The "ikagurumi-zoba" (rustic buckwheat noodles), made by grinding the buckwheat with the hulls still on the millstone, is elegant and has the original flavor of buckwheat noodles.
The sauce, made from kelp, shiitake mushrooms, and dried bonito, is well-balanced with sweetness, sourness, and umami, as if they were all contained within a round circle. The noodles made with 100% buckwheat, amazingly fragrant and full of flavor, are served with maximum of 30 servings a day to maintain the quality.
