The knives are handmade by craftsmen of Sakai Uchihamono, a traditional manufacturing method that has been used for 600 years in Sakai, Osaka, a production center of cutlery, based on the division of labor between blacksmith and sharpening craftsmen. It can be used for a wide range of applications, from sushi to Japanese, Western, Chinese, confectionery, and home cooking.
This authentic knife is forged from Ginsanko steel, a stainless steel that is resistant to rust and sharp. The knife is designed to be easy to pull out and cut by warping it slightly. The handle is made of ebony, a high-grade material that is resistant to water and damage.
